12 oz marinated artichokes, drained
1/2 cup roasted red peppers, diced
1 (14 oz) can garbanzo beans, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
For the Herbed Vinaigrette:
1/3 cup olive oil
3 tbsp red wine vinegar
2 tsp maple syrup
1/2 tsp garlic powder
2 tbsp fresh basil, chopped
2 tsp fresh oregano, chopped (or 1 tsp dried)
Salt & pepper to taste
Directions:
1. Whisk vinaigrette ingredients in a bowl; season to taste.
2. Combine salad ingredients in a bowl.
