250g Self-Raising Flour
75g Cold Butter, cubed
150g Cheddar Cheese, grated
125ml Milk
1 Large Egg
½ tsp Mustard Powder (optional)
1 tsp Baking Powder
¼ tsp Salt
Pinch of Cayenne Pepper (optional)

Directions:
1. Preheat oven to 220°C (425°F). Line a baking sheet.
2. Mix flour, baking powder, salt, and cayenne in a bowl.
3. Add butter, rubbing until mixture resembles coarse crumbs.
4. Stir in cheese. Add milk and egg, mix until sticky dough forms.
5. Knead gently, cut into scones.
6. Bake for 15-20 mins.
