500g butternut squash, peeled and cubed
3 sprigs rosemary, chopped
4 cloves garlic, peeled
1 yellow onion, sliced
2 tbsp olive oil
500g gnocchi
50g parmesan, grated
Juice of 1 lemon
30g walnuts, chopped
75ml milk
50g pancetta, chopped
1 ball mozzarella, torn

Directions:
1. Roast squash, onion, and garlic at 180ºC for 30 mins.
2. Blend into a purée.
3. Cook pancetta until crispy.
4. Mix gnocchi with sauce, milk, and pancetta.
5. Top with mozzarella, grill until melted.
