1 tbsp vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp Thai red curry paste
400 ml coconut milk
4 cups chicken broth
2 chicken breasts, sliced
1 red bell pepper, sliced
200g rice noodles
2 tbsp fish sauce
Juice of 1 lime
Fresh cilantro, for garnish
Directions:
1. Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
2. Stir in curry paste and cook for 1 minute.
3. Add coconut milk and chicken broth, bringing to a simmer.
4. Add chicken and bell pepper, cooking until chicken is done.
5. Stir in rice noodles, fish sauce, and lime juice. Cook until noodles are tender.
6. Garnish with cilantro and serve hot.
