2 lbs ground beef, 80% lean
1 ½ cups crushed corn tortilla chips
1 small onion, diced
1 green bell pepper, diced
2 eggs, whisked
1 (10 oz) can Rotel tomatoes
4 oz canned corn, drained
1 packet taco seasoning
1 ½ cups shredded cheddar cheese, divided
⅓ cup red taco sauce (optional)
Directions:
1. Preheat oven to 350°F (175°C).
2. Combine all ingredients, except for ½ cup cheese.
3. Bake for 50 min, top with remaining cheese & taco sauce, then bake 10-15 min more.
