1.25 lbs sweet potatoes
1 large head cauliflower
1 tbsp olive oil
1.25 tsp salt, divided
1 tsp garlic powder
1 tsp ground cumin
1 cup quinoa
1.5 cups water
1 medium red onion
1 bunch kale

Directions:
1. Preheat oven to 425°F. Cube sweet potatoes, coat cauliflower in oil and spices, roast for 40 min.
2. Cook quinoa while veggies roast. Saute onions, then kale.
