500g sweet potatoes, peeled & chopped
2 tbsp olive oil
1 red onion, finely sliced
3 garlic cloves, minced
2 tbsp ginger, minced
4 tbsp Thai red curry paste
400ml coconut milk
300ml water/broth
300g spinach, chopped
Optional: 3 tbsp cashews, ½ bunch basil, ½ bunch coriander

Directions:
1. Sauté onion, garlic, and ginger in oil.
2. Stir in curry paste.
3. Add sweet potatoes, coconut milk, and broth. Simmer 15-20 mins.
4. Stir in spinach.
5. Serve with rice & toppings.
