12 oz pasta (penne or farfalle)
2 tbsp olive oil
1 lb salmon fillets (skin removed)
Salt and pepper (to taste)
2 garlic cloves, minced
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
2 cups fresh spinach
1 tsp lemon zest
1 tbsp lemon juice
Directions:
1. Cook pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a skillet. Season salmon with salt and pepper, cook for 4–5 minutes per side. Remove and flake into pieces.
3. Sauté garlic in the same skillet. Add cream and chicken broth; simmer. Stir in Parmesan until smooth.
4. Add spinach; cook until wilted. Mix in salmon, pasta, lemon zest, and juice. Combine thoroughly and serve.
