Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms
This dish was born out of love and compromise, blending hearty meatiness with creamy veggies. My husband and I created this on a chilly night as our first “together recipe”—combining his love for bacon and mushrooms with my fondness for creamy, comforting dishes. It became a staple for dinner parties, always impressing guests with its rich flavors and cozy vibes.
1.5 lbs boneless chicken breast
1 tbsp butter
Salt, lemon pepper seasoning, paprika
10 oz spinach
4 cloves garlic
⅔ cup half-and-half
⅔ cup mozzarella cheese
4 oz mushrooms
4 slices bacon, cooked
4 slices Pepper Jack cheese
Directions:
1. Preheat oven to 375°F. Bake seasoned chicken for 15-20 mins.
2. Sauté spinach with garlic, half-and-half, and mozzarella.
3. Caramelize mushrooms.
4. Top chicken with spinach, bacon, mushrooms, cheese. Bake 15-20 mins.
