Smokey Halloumi Pasta Bake

This hearty Halloumi Pasta Bake is a perfect blend of smoky flavors and creamy textures. Originating from the Mediterranean, halloumi cheese brings a unique firmness that contrasts perfectly with the tender pasta and gooey cheddar. 300 g dried pasta
2 tbsp olive oil
2 cloves garlic, minced
1 medium onion, finely chopped
2 tsp smoked paprika
250 g halloumi cheese, cubed
1 large courgette, cubed
160 g mature cheddar, grated
800 g canned chopped tomatoes
Salt and black pepper

Directions:
1. Preheat oven to 200°C.
2. Cook pasta for 5 mins, drain.
3. Fry garlic, onion, paprika in oil. Add courgettes, halloumi.
4. Mix in tomatoes, pasta, top with cheddar.
5. Bake for 10 mins.
