Smokey Halloumi Pasta Bake

A comforting dish inspired by Mediterranean flavors, this pasta bake is rich with smokey paprika and tender chunks of halloumi. Perfect for a cozy family meal, it brings together the satisfying textures of firm halloumi and gooey cheddar. The smokey aroma and tomato tang make this a truly irresistible dinner that’s ready in no time!

300g dried pasta
2 tbsp olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 tsp smoked paprika
250g halloumi cheese, cubed
1 large courgette, cubed
160g mature cheddar cheese, grated
800g canned chopped tomatoes
Salt & black pepper

Directions:
1. Preheat oven to 200°C (390°F).
2. Par-cook pasta for 5 mins, drain.
3. Fry onion, garlic & 1 tsp paprika in oil.
4. Add courgette & halloumi, fry until colored.
5. Add tomatoes, season, then add pasta.
6. Mix, transfer to roasting tray, top with cheddar & remaining paprika.
7. Bake for 10 mins until cheese bubbles. Enjoy!
