2 medium butternut squash
3 Tbsp avocado/olive oil, divided
1 lb Italian sausage
1 onion, diced
3 cloves garlic, minced
1 Tbsp each fresh sage, rosemary, thyme
3 cups kale, chopped
1 apple, chopped
1 cup pecans, chopped
½ cup dried cranberries

Directions:
1. Preheat oven to 425°F. Roast squash cut-side down for 40 min.
2. Sauté sausage, onion, garlic, herbs, kale, apple, and pecans.
3. Scoop and fill squash. Broil for 2-4 min.
