2 tbsp butter (plus extra for greasing)
1/2 white onion, minced
2 garlic cloves, minced
1 1/2 tsp salt
1/2 tsp black pepper
1/2 cup chicken stock
1 1/4 cups heavy cream
1 1/2 lbs russet potatoes, sliced
2 cups cheddar cheese, grated
3/4 cup provolone cheese, grated
1/2 cup Parmesan cheese, grated
Fresh parsley (optional)
