Red Velvet Oreo Cheesecake
Ingredients:
For the Crust:
• 2 cups Oreo crumbs
• ¼ cup unsalted butter, melted
For the Cheesecake:
• 24 oz (680g) cream cheese, softened
• 1 cup granulated sugar
• 1 cup sour cream
• 1 tsp vanilla extract
• 3 large eggs
• 2 tbsp cocoa powder
• 1 tsp red food coloring
• ½ cup crushed Oreos
For the Drip:
• 1 cup semi-sweet chocolate chips
• ½ cup heavy cream
For Decoration:
• Whipped cream
• Mini Oreos
• Red velvet cake crumbs
• Sprinkles
Directions:
1. Prepare the Crust:
Preheat the oven to 325°F (163°C). Mix the Oreo crumbs with melted butter, then press the mixture into a 9-inch springform pan. Bake for 10 minutes. Let it cool.
2. Make the Cheesecake Filling:
Beat the cream cheese until smooth. Add sugar, sour cream, and vanilla, and mix. Add eggs one at a time, beating after each addition. Stir in cocoa powder and red food coloring. Gently fold in crushed Oreos.
3. Assemble and Bake:
Pour the cheesecake batter over the cooled crust. Bake for 60-70 minutes until the center is set but slightly wobbly. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Refrigerate for at least 4 hours, or overnight.
4. Prepare the Drip:
In a microwave-safe bowl, heat chocolate chips and heavy cream until smooth, stirring every 20-30 seconds. Drizzle the chocolate ganache over the cheesecake.
5. Decorate:
Top with whipped cream, mini Oreos, red velvet cake crumbs, and sprinkles.
