1 ½ cups (300 g) dry red lentils
1 large carrot, finely diced
1 small bell pepper
1 large onion, chopped
4 garlic cloves, minced
1 tbsp fresh ginger, minced
½ tbsp vegetable oil
3 cups (720 ml) vegetable broth or water
1 cup (240 ml) canned coconut milk
1 ½ tsp ground cumin
1 tbsp curry powder
½ tbsp sweetener of choice
1 tsp ground turmeric
1 tsp paprika
Sea salt & black pepper to taste
⅓ tsp red pepper flakes (optional)

Directions:
1. Rinse lentils under running water. Chop vegetables.
2. Heat oil in a pot and sauté onion for 3-4 minutes. Add garlic, ginger, carrot, and bell pepper.
3. Add spices, lentils, and broth. Simmer for 10 minutes.
4. Stir in coconut milk and cook until thickened (5 mins).
5. Season with salt & pepper. Serve warm with rice or naan.
