1 tbsp avocado oil
1 medium onion, diced
2 garlic cloves, chopped
1 tbsp fresh ginger, grated
1 small red chili pepper, chopped
2 tbsp garam masala
1 tbsp curry powder
14 oz crushed tomatoes
½ cup natural peanut butter
13.5 oz coconut milk
14 oz chickpeas, drained
2 cups broccoli florets
Fresh cilantro
Directions:
1. Heat oil, cook onion until soft.
2. Add garlic, ginger, chili, cook 1 min.
3. Stir in spices, tomatoes, peanut butter, coconut milk.
4. Add chickpeas, broccoli, simmer 10 min.
5. Garnish with cilantro. Serve with rice/naan.
