2 tbsp olive oil
1/4 tsp crushed red pepper flakes
3 cloves garlic, minced
1 pint cherry tomatoes, halved
1/4 cup vegetable broth
3 tbsp lemon juice (divided)
1/2 cup fresh basil, chopped
1/2 tsp lemon zest
1/2 tsp salt
1 tsp sugar
1/4 tsp black pepper
1.5 lb cod, cut into 4 fillets
Additional salt and pepper
Directions:
1. Heat olive oil in a pan. Sauté red pepper flakes and garlic for 1 min.
2. Add tomatoes, cook 9-12 mins. Stir in broth, 1 tbsp lemon juice, and simmer.
3. Mix in basil, remaining lemon juice, zest, salt, sugar, pepper, and set aside.
4. In another pan, heat olive oil, season cod, cook 3 mins per side.
5. Serve with tomato basil sauce.
