Marry Me Halloumi

Inspired by the popular “Marry Me Chicken,” this vegetarian twist will have you swooning with its creamy and flavorful sauce. The dish combines halloumi, garlic, tomatoes, herbs, and parmesan to create a rich, delicious meal that’s perfect for a special occasion or an easy weeknight dinner. Ready in just 20 minutes, it’s a true one-pan wonder that saves on washing up too!

225g reduced fat halloumi cheese, sliced
Salt & pepper to taste
1 onion, diced
1 garlic clove, minced
150g cherry tomatoes, halved
240ml vegetable stock
120ml reduced fat cream
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp smoked paprika
2 tbsp grated parmesan
Handful fresh spinach

Directions:
1. Season halloumi; cook until golden. Remove from pan.
2. Sauté onion & garlic. Add tomatoes.
3. Pour in stock & simmer.
4. Stir in cream, oregano, thyme & paprika.
5. Add parmesan & spinach.
6. Return halloumi, cover & simmer.
