Marry Me Chickpeas and Orzo
This one-pot dish is inspired by the famous “Marry Me” chicken recipe. But instead of chicken, we have delicious chickpeas that absorb all the flavors of the creamy garlic sauce, sun-dried tomatoes, fresh basil, and spinach. Perfect for a cozy dinner with a vegetarian twist, and it’s ready in just 30 minutes. Trust us, this is a meal you’ll want to say “I do” to every week!
1 tbsp olive oil
1 shallot, minced
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes
1 (15-oz) can chickpeas, rinsed & drained
3 cups vegetable broth
1 cup uncooked orzo pasta
1/2 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
1/2 cup heavy cream
2 handfuls fresh spinach
1/2 cup Parmesan cheese, grated
1/4 cup fresh basil, chopped
Salt & pepper
Directions:
1. Sauté aromatics in olive oil for 3 mins.
2. Add chickpeas, broth, orzo, tomatoes, and seasoning. Simmer.
3. Stir in cream, spinach, Parmesan, and basil. Cook until spinach wilts.
4. Season & serve!
