1 tbsp olive oil
5 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1/2 tsp oregano
1/2 tsp red chili flakes
1 tsp salt
1/4 tsp black pepper
2 (15-oz) cans chickpeas, drained & rinsed
1 cup vegetable broth
1 tbsp tomato paste
1 cup vegan cream
2 cups baby spinach, sliced
Fresh basil leaves, chopped
1/2 cup grated vegan parmesan (optional)

Directions:
1. Heat olive oil in a large pan over medium heat. Sauté garlic until fragrant.
2. Add tomatoes, oregano, chili flakes, salt, and pepper. Cook for 1 min.
3. Stir in chickpeas, broth, tomato paste, cream, and spinach. Simmer until spinach wilts.
