Marry Me Chickpeas
Ready to fall in love with a dish? These “Marry Me Chickpeas” are a vegetarian twist on the famous Marry Me Chicken, wrapped in a creamy Tuscan sauce! It’s a simple yet flavorful meal made in just 15 minutes, perfect for impressing a loved one (or yourself!) any night of the week. Whether served over rice, with crusty bread, or alongside veggies, these chickpeas will have you saying, “I do” to a second helping!
2 Tbsp unsalted butter
4 cloves garlic, minced
½ tsp salt, oregano, crushed red pepper flakes
¼ tsp black pepper
½ cup sun-dried tomatoes, chopped
1 cup vegetable broth
2 cans chickpeas (15 oz each)
1 cup heavy cream
½ cup grated parmesan
2 Tbsp fresh basil, chopped
Directions:
1. Heat butter, garlic, and seasonings in a pan over medium heat for 2 mins.
2. Add sun-dried tomatoes, broth, and chickpeas. Cook for 5 mins.
3. Stir in cream, parmesan, and basil. Serve warm.
