Ingredients:
Crust:
20 Oreo Cookies, crushed into crumbs
6 tablespoons unsalted butter, melted
Cheesecake Filling:
24 ounces cream cheese, softened to room temperature
1 1/2 cups granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon salt
2 large eggs, room temperature
1/2 tablespoon vanilla extract
1 cup sour cream, room temperature
3 Snickers bars, chopped
12 whole Oreo cookies
10 Oreo cookies, crushed
Caramel Sauce:
1 cup granulated sugar
6 tablespoons unsalted butter, room temperature and cut into pieces
1/2 cup heavy whipping cream
1 teaspoon salt
Cinnamon Apples:
2 large green apples, peeled and chopped
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon lemon juice
1 tablespoon butter
Garnish:
2 large Snickers bars, chopped
Instructions:
Prepare the Crust:
Prep: Lightly coat a 9-inch springform pan with nonstick spray and set aside.
Crush Cookies: Place the Oreo cookies in a ziplock bag and crush them using a rolling pin until fine crumbs form.
Mix Crust: In a large bowl, mix the crushed cookies with the melted butter until well combined.
Form Crust: Press the cookie mixture into the bottom and about 1 inch up the sides of the prepared springform pan using a measuring cup or the back of a spoon.
Chill: Refrigerate the crust for at least 20 minutes while preparing the filling.
Make the Cheesecake Filling:
Preheat Oven: Preheat the oven to 325°F (163°C).
Mix Filling: In a large bowl, beat the softened cream cheese for about 1 minute until smooth. Add the sugar, salt, and flour, and mix until fully combined, scraping down the sides as needed.
Add Eggs: With the mixer on low, add the eggs one at a time, mixing just until combined. Do not overmix.
Finish Filling: Add the vanilla extract and sour cream, and mix until smooth, scraping the sides and bottom of the bowl to ensure everything is well incorporated.
Add Snickers: Fold in the chopped Snickers bars.
Assemble Cheesecake: Pour half of the cheesecake batter into the prepared crust. Arrange the whole Oreo cookies on top of the batter, then pour the remaining batter over the Oreos. Smooth the top with a spatula, then sprinkle the crushed Oreos over the top, pressing them slightly into the batter.
Bake: Transfer the cheesecake to the preheated oven and bake for 45-50 minutes, or until the edges are set but the center is still slightly wobbly.
Cool: Turn off the oven and crack the door open slightly. Allow the cheesecake to cool completely in the oven before refrigerating for at least 5-6 hours, or overnight.
Make the Caramel Sauce:
Melt Sugar: In a medium saucepan over medium heat, melt the sugar, stirring constantly, until it becomes a brownish liquid.
Add Butter: Add the butter to the melted sugar and stir until fully combined.
Add Cream: Carefully pour in the heavy cream while still stirring. Allow the mixture to boil for 1 minute without stirring.
Finish Caramel: Remove from heat, stir in the salt, and transfer the caramel to a mason jar or other container. Let it cool.
Prepare the Cinnamon Apples:
Cook Apples: In a medium pan over medium heat, combine the chopped apples, brown sugar, cinnamon, nutmeg, lemon juice, and butter. Stir to coat the apples.
Simmer: Cook the apples until they are just tender, about 10 minutes. Remove from heat and let cool.
Assemble and Serve:
Top Cheesecake: Remove the cheesecake from the springform pan and place it on a serving plate. Top with the cooled cinnamon apples and drizzle generously with the caramel sauce.
Garnish: Sprinkle the chopped Snickers bars over the top.
Chill: Refrigerate the cheesecake until ready to serve.
