Italian Lentil Soup (Zuppa di Lenticchie)
This classic Italian Lentil Soup is hearty, comforting, and packed with protein-rich lentils and fresh vegetables. Traditionally eaten on New Year’s Eve in Italy for good luck and prosperity, this dish is also perfect for a cozy family meal any time of the year. Made with simple pantry ingredients, it’s budget-friendly, nutritious, and incredibly satisfying. Serve it with crusty bread, and you’ve got a warm hug in a bowl!
3 tbsp extra virgin olive oil
1 medium onion, diced
1 large carrot, diced
2 ribs celery, diced
3 cloves garlic, chopped
1 cup dried brown lentils
400g crushed tomatoes
5 ½ cups vegetable stock
1 Parmesan rind
¼ tsp dried chili flakes
1 ½ tsp dried basil
1 ½ tsp dried oregano
1 tsp fresh rosemary, chopped
Sea salt & black pepper to taste
Directions:
1. Sauté onion, carrot, and celery in olive oil for 5 mins.
2. Add garlic, then remaining ingredients.
3. Simmer for 30-40 mins.
4. Garnish with parsley, olive oil, and Parmesan. Serve.
