Indian-Spiced Lentil Soup
This easy Lentil Soup is a fusion of wholesome ingredients and vibrant spices. Born out of a “clean out the kitchen” moment, this hearty, Indian-spiced soup is packed with veggies, making it both delicious and nourishing. 1 ½ tbsp olive oil
1 large red onion, diced
4 celery stalks, diced
1 large carrot, diced
5 cloves garlic, minced
26 oz fresh tomatoes, chopped
1 cup dried brown lentils
1 tbsp garam masala
Salt & pepper to taste
6 cups vegetable broth
2-3 sprigs thyme
1 cup kale, chopped
2 tbsp lime juice
Directions
1. Heat oil in a pot; add onion, celery, carrot, and garlic. Cook for 8 minutes.
2. Add tomatoes, lentils, garam masala, salt, pepper, broth, and thyme. Bring to boil, then simmer for 30 mins.
3. Blend 2 cups of soup until smooth, then return to pot. Add kale and lime juice. Stir and serve.
