Indian-Spiced Lentil Soup

1 ½ tbsp olive oil
1 large red onion, diced
4 stalks celery, diced
1 large carrot, diced
5 garlic cloves, minced
26 oz fresh tomatoes, chopped (or 28 oz canned, drained)
1 cup dried brown lentils, rinsed
1 tbsp garam masala
Salt & pepper to taste
6 cups vegetable broth
2-3 sprigs thyme
1 cup kale, chopped
2 tbsp lime juice
Directions:
1. Sauté onion, celery, carrot, and garlic in olive oil until softened.
2. Add tomatoes, lentils, garam masala, salt, and pepper; stir.
3. Pour in broth, add thyme, and simmer for 30 minutes.
4. Blend 2 cups of soup, then mix back into the pot.
5. Stir in kale and lime juice. Serve warm.
