This dish brings together caramelized sweet potatoes, mushrooms, and peppers with the aromatic flavors of pesto rice, all topped with crispy, squeaky halloumi. It’s a colorful and flavor-packed meal, with a variety of tastes and textures, and everything cooks in one big roasting dish. 2 medium sweet potatoes, cut into rounds
1 red pepper, sliced
150g (5 oz) mushrooms, sliced
1 red onion, cut into wedges
2 Tbsp olive oil
1 Tbsp balsamic glaze
150g (5 oz) cherry tomatoes
250g (1 cup) prepared rice
3 Tbsp pesto
225g (8 oz) halloumi, sliced
Hummus, for topping

Directions:
1. Preheat oven to 200°C (390°F).
2. Oil roasting dish, add sweet potatoes, and bake for 20 minutes.
3. Add mushrooms, onion, peppers, and tomatoes. Drizzle oil and balsamic, bake 30 more minutes.
4. Heat rice, mix with pesto, add to dish.
5. Top with halloumi, grill until crispy.
6. Serve with hummus.
