Halloumi Stuffed Peppers

2 tbsp Cooking Oil
4 Large Bell Peppers, halved
225g Halloumi Cheese, chopped
200g Cooked White Rice
1 Red Onion, diced
3 Cloves Garlic, crushed
1 Courgette, diced
100g Mushrooms, diced
1 tbsp Dried Mixed Herbs
Pinch Salt & Pepper
400g Tin Chopped Tomatoes
3 tbsp Parmesan Cheese, grated
Directions:
1. Preheat oven to 180°C. Roast peppers for 5-10 mins.
2. Fry garlic & onion in oil for 5 mins. Add courgette, mushrooms & halloumi; cook for 2 mins.
3. Stir in tomatoes, herbs, salt, & pepper. Simmer for 15 mins.
4. Mix in rice, fill peppers, sprinkle Parmesan, bake for 20 mins.
