Halloumi Stuffed Peppers are a tasty and easy midweek meal perfect for anyone looking to enjoy a vegetarian twist on a classic. 2 tbsp Cooking Oil
4 Large Bell Peppers (halved)
225g Halloumi Cheese (chopped)
200g Cooked White Rice
1 Red Onion (diced)
3 Cloves Garlic (crushed)
1 Courgette (diced)
100g Mushrooms (diced)
1 tbsp Mixed Herbs
400g Chopped Tomatoes
3 tbsp Parmesan Cheese (grated)
Pinch Salt and Pepper
Directions:
1. Preheat oven to 180°C. Roast peppers for 10 mins.
2. Fry garlic, onion, courgette, mushrooms, and halloumi.
3. Add tomatoes, salt, pepper, and herbs. Simmer.
4. Stir in rice, fill peppers, top with Parmesan, bake 20 mins.
