Halloumi Stuffed Peppers

2 tbsp cooking oil
4 large bell peppers (any color, cut in half)
225g halloumi cheese (chopped)
200g white rice (cooked)
1 red onion (finely diced)
3 cloves garlic (crushed)
1 courgette (diced)
100g mushrooms (diced)
1 tbsp dried mixed herbs
Pinch salt and pepper
400g tin chopped tomatoes
3 tbsp Parmesan cheese (grated)
Directions:
1. Preheat oven to 180°C. Roast peppers for 5-10 minutes.
2. Sauté onion and garlic, then add courgette, mushrooms, halloumi, and seasonings.
3. Stir in tomatoes, simmer, then mix in rice.
4. Fill peppers, top with Parmesan, bake 20 mins.
