Halloumi Casserole with Crispy Garlic Breadcrumbs
This Mediterranean-inspired halloumi casserole is a true delight! Featuring squidgy halloumi cheese, a medley of vibrant vegetables, and a rich tomato sauce topped with crispy garlic breadcrumbs, this dish is perfect for anyone craving a flavorful vegetarian meal. 1 tbsp oil
1 onion, diced
2 bell peppers, diced (red and yellow)
1 medium zucchini, diced
5 medium mushrooms, diced
3 cloves garlic, minced
225g halloumi cheese, diced
2 x 400g tins chopped tomatoes
2 tbsp tomato puree
150g black olives
1 tsp dried oregano
1 tsp smoked paprika
¼ tsp crushed chili flakes
Salt and black pepper
For the garlic bread topping:
3 cloves garlic
Fresh parsley
3 slices bread, torn
1 tbsp melted butter
1 tbsp olive oil
Salt and black pepper
Directions:
1. Heat oil in a large pan, add vegetables, and cook for 5 mins. Add garlic and halloumi, cook for 2 more mins.
2. Add tomatoes, puree, olives, oregano, paprika, and chili flakes. Season and simmer for 10 mins.
3. Blitz garlic, parsley, bread, butter, and oil to make breadcrumbs.
4. Transfer mixture to a casserole dish, sprinkle breadcrumbs, and bake at 190°C for 15-20 mins.
