1 red onion, cut into wedges
500g butternut squash (frozen cubes)
3 garlic cloves, crushed
2 tsp olive oil
1 tsp paprika
300g dry orzo
700ml vegetable stock
250g cherry tomatoes
2 tbsp pesto
225g halloumi, cubed
Salt & pepper

Directions:
1. Preheat oven to 200°C. Toss onion, squash, and garlic with oil, paprika, salt, & pepper. Bake for 30 mins.
2. Add orzo, stock, tomatoes, pesto, and place halloumi on top. Bake for 15-25 mins until golden.
