Halloumi and Butter Bean Bake
This vegetarian dish is a versatile, comforting option for those looking for a quick and hearty meal. 1 tbsp olive oil
1 red onion, sliced
2 garlic cloves
2 tsp smoked paprika
1 tsp chili flakes
1 tsp oregano
1 jar roasted red peppers, sliced
2 tins (800g) chopped tomatoes
1 jar (600g) butter beans
1 packet (225g) halloumi
2 large handfuls of fresh spinach
Directions:
1. Preheat oven to 180°C.
2. Heat a large oven-proof pan over medium heat and add olive oil.
3. Add onion, cook for 8 minutes, add garlic, cook for another few minutes.
4. Add paprika, oregano, chili flakes, peppers, and tomatoes. Stir and simmer.
5. Add butter beans and halloumi. Bake for 20 minutes.
6. Stir in spinach and let it wilt.
