French Chicken Casserole a la Normande

This French Chicken Casserole, or Chicken Normandy, is the perfect dish to cozy up with during chilly months. 2 lbs chicken thighs and legs
1 tbsp olive oil
4 shallots, diced
1 rib celery, diced
4-5 sprigs thyme
2 cloves garlic, minced
4 oz bacon lardons
2 tbsp brandy
2 tbsp flour
1/3 cup chicken stock
1 ½ cups dry apple cider
2 apples, peeled and cut into wedges
1/2 cup heavy cream

Directions:
1. Preheat oven to 350°F. Season chicken with salt, brown in oil, and set aside.
2. Fry bacon, add shallots, celery, thyme, and garlic. Cook until soft.
3. Add brandy, then flour, stir to paste. Add stock and cider, combine.
4. Return chicken and bacon, bring to boil, bake covered for 30 min, then uncovered for 30 min.
5. Fry apple wedges, add cream to casserole, cook for 20 more min. Stir in apples.
