2 tbsp vegetable oil
3 cloves garlic, minced
1/4 cup diced onion
1 large carrot (3-4 oz)
2 tbsp tomato paste
1/4 cup tomato sauce (optional)
1 1/4 cups lentils (green, red split, or black)
12 oz potatoes, cut into bite-sized pieces
2 tsp salt
1/4 tsp black pepper
1/4 tsp thyme
1/2 tsp oregano
4-5 cups water
Directions:
1. Heat oil in a large pot. Add onion and cook for 1 minute. Add garlic and carrot, cook for 2-3 minutes.
2. Stir in tomato paste, tomato sauce, lentils, and potatoes. Add water, salt, pepper, thyme, and oregano.
3. Bring to a boil, then reduce heat to medium-low. Simmer for 25-35 minutes until lentils and potatoes are tender.
4. Adjust seasoning and serve warm.
