1 tbsp cooking oil
1 onion, diced
2 cloves garlic, chopped
1 tsp fresh ginger, chopped
4 dried cloves
2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
½ tsp cinnamon
½ tsp cayenne pepper
1 can (400g) chickpeas, drained
1 can (400g) chopped tomatoes
½ cup vegetable stock
1 cup fresh spinach
Fresh coriander, chopped

Directions:
1. Heat oil in a pan over medium heat. Add onion and cook until soft.
2. Stir in garlic, ginger, cloves, and spices. Cook for 1 minute.
3. Add chickpeas, tomatoes, and stock. Simmer for 10 minutes.
4. Stir in spinach before serving. Top with coriander.
