1 lb. boneless skinless chicken breasts, diced
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp fresh parsley, chopped
1 tsp fresh oregano, chopped
1 tsp fresh thyme, chopped
1 tsp smoked paprika, ½ tsp cumin, ¼ tsp turmeric, ½ tsp onion powder, ½ tsp garlic powder, ⅛ tsp cayenne pepper
1 cup long grain white rice
1 medium zucchini, grated
2 cups chicken broth
