1 large butternut squash
1 tbsp olive oil
1 cup cooked quinoa
1/2 cup chopped walnuts
1/4 cup dried cranberries
1/2 tsp cinnamon
Salt and pepper to taste
Directions:
1. Preheat oven to 400°F.
2. Slice the butternut squash in half, scoop out seeds.
3. Brush with olive oil, season with salt and pepper.
4. Roast for 45-50 minutes until tender.
5. Mix quinoa, walnuts, cranberries, and cinnamon.
6. Stuff roasted squash with the quinoa mixture.
7. Bake for an additional 10 minutes.
