2 lbs salmon, cut into portions
2 Tbsp avocado oil
1/2 tsp sea salt
1 tsp garlic powder
1/2 tsp paprika
Roasted Red Pepper Sauce:
1 Tbsp avocado oil
1 cup yellow onion, chopped
5 garlic cloves, minced
16 oz jar roasted red peppers
15 oz can full-fat coconut milk
1 tsp sea salt
1 cup cherry tomatoes (optional)
5 oz baby spinach (optional)
Directions:
1. Heat oil in a skillet, sauté onion for 5 min, add garlic, and cook for 2-3 min.
2. Blend sautéed mix with roasted peppers, coconut milk, and salt until smooth.
3. Cook salmon in hot oil for 6 min flesh-side down, flip and cook for 4 more.
4. Combine sauce with cherry tomatoes and spinach, simmer for 3 min. Serve with salmon.
