Crispy Chickpeas and Halloumi with Greens and Garlicky Yogurt
This delightful dish combines the Mediterranean flavors of crispy chickpeas, golden fried halloumi, and a creamy garlicky yogurt sauce. Inspired by Alison Roman’s Dining In Cookbook, it swaps ground lamb for halloumi, creating a vegetarian twist that’s rich in texture and flavor. Perfect for a quick weeknight meal, this one-pan recipe showcases the brilliance of simple, wholesome ingredients.
Garlicky Yogurt: 1 cup Greek yogurt, 1 garlic clove (grated), 1 tbsp lemon juice, salt & pepper to taste.
Main Dish: 1 lb halloumi (sliced), 1 bunch Swiss chard, 4 cups cooked chickpeas, 6 tbsp olive oil, 3 garlic cloves (minced), 1 tsp cumin seeds, 1 tsp crushed red pepper flakes, salt & pepper to taste.
Directions:
1. Mix yogurt ingredients and set aside.
2. Fry halloumi slices until golden on both sides; set aside.
3. Crisp chickpeas with olive oil, garlic, cumin, and red pepper flakes; remove from skillet.
4. Sauté chard stems, then wilt leaves. Combine with chickpeas.
5. Serve topped with halloumi and yogurt.
