2 tbsp butter
1 lb mushrooms (sliced)
1 tbsp butter
1 onion (diced)
2 carrots (diced)
2 celery stalks (diced)
2 cloves garlic (chopped)
1 tsp thyme (chopped)
6 cups chicken broth
1 cup wild rice
1 1/2 cups cooked chicken (diced or shredded)
1 cup milk or cream
1 cup parmesan cheese (grated)
Salt and pepper to taste
Directions:
1. Melt butter in a pan over medium-high heat, add mushrooms and cook for 10-15 mins. Set aside.
2. Add butter, onions, carrots, and celery to the pan. Cook for 8-10 mins.
3. Mix in garlic and thyme, cook for 1 min.
4. Add broth, rice, chicken, and mushrooms. Boil, then simmer for 20-30 mins.
5. Stir in milk and cheese until melted. Season with salt and pepper.
