It’s the perfect combination of creamy, cheesy comfort and healthful ingredients like spinach and rotisserie chicken, making it an easy yet indulgent dinner. 3 tbsp butter
1 ½ cups yellow onion, finely chopped
6 cloves garlic, sliced
2 tsp dried Italian seasoning
¼ tsp crushed red pepper
1 ¾ tsp kosher salt
3 tbsp flour
2 ½ cups whole milk
4 oz chive & onion cream cheese
4 cups shredded rotisserie chicken
3 cups cooked white rice
2 packages frozen spinach (10 oz each), thawed
2 tbsp lemon juice
1 tsp lemon zest
8 oz mozzarella cheese, shredded
¼ cup Parmesan cheese, grated

Directions:
1. Preheat oven to 350°F.
2. Sauté onions, garlic, and spices in butter.
3. Add flour and milk to thicken.
4. Mix in cream cheese, chicken, rice, spinach, lemon juice, and zest.
5. Transfer to baking dish, top with cheeses, bake 15 min, broil until golden.
