3 tbsp Unsalted Butter
1 ½ cups Yellow Onion, finely chopped
6 cloves Garlic, thinly sliced
2 tsp Dried Italian Seasoning
¼ tsp Crushed Red Pepper
1 ¾ tsp Kosher Salt, divided
3 tbsp All-Purpose Flour
2 ½ cups Whole Milk
4 oz Chive and Onion Cream Cheese
4 cups Rotisserie Chicken, shredded
3 cups Long-Grain White Rice, cooked
2 packages (10 oz each) Frozen Chopped Spinach, thawed
2 tbsp Fresh Lemon Juice
1 tsp Lemon Zest
8 oz Part-Skim Mozzarella Cheese, shredded
¼ cup Parmesan Cheese, grated
Directions:
1. Preheat oven to 350°F (175°C). Coat a baking dish with cooking spray.
2. Sauté onion, garlic, Italian seasoning, and red pepper in butter.
3. Stir in flour and cook, then add milk gradually to thicken.
4. Add cream cheese, salt, chicken, rice, spinach, lemon juice, and zest.
5. Transfer to a baking dish, top with cheeses, and bake for 15 min.
6. Broil for 2-3 min until cheese is golden brown.
