Cranberry Balsamic Roast Beef
Cranberries aren’t just for desserts! This Cranberry Balsamic Roast Beef is a perfect winter dish, combining tart cranberries with the savory richness of a tender beef roast. Braised slowly, this roast beef is infused with layers of flavor—from balsamic vinegar’s tang to the sweetness of maple syrup and cranberry sauce. The sauce is made with simple ingredients like onions, garlic, and rosemary, creating a comforting, festive dish that’s perfect for cozy nights. Serve it with mashed potatoes for an extra special meal!
1 tbsp olive oil
2-3 lb beef roast
1 large onion, sliced
2 tbsp tomato paste
4 cloves garlic, chopped
1 tsp thyme, chopped
1 tsp rosemary, chopped
1/2 tsp red pepper flakes (optional)
2 cups beef broth
1/4 cup balsamic vinegar
1/2 cup cranberry sauce (optional)
2 tbsp soy sauce
4 tbsp maple syrup
1 tbsp Worcestershire sauce
1 cup cranberries
1 lb carrots, sliced
Directions:
1. Heat oil in a large oven-safe pan, brown beef, and set aside.
2. Cook onion until tender. Add tomato paste, garlic, thyme, rosemary, and red pepper flakes, cooking until fragrant.
3. Add broth, vinegar, cranberry sauce, soy sauce, maple syrup, Worcestershire sauce, cranberries, and carrots.
4. Braise at 275°F for 3-4 hours or slow cook on LOW for 8-10 hours.
5. Remove beef, slice or shred, and optionally thicken the sauce.
