1 tbsp olive oil
2-3 lb beef roast
1 large onion, sliced
2 tbsp tomato paste
4 cloves garlic, chopped
1 tsp thyme, chopped
1 tsp rosemary, chopped
1/2 tsp red pepper flakes (optional)
2 cups beef broth
1/4 cup balsamic vinegar
1/2 cup cranberry sauce
2 tbsp soy sauce
4 tbsp maple syrup
1 tbsp Worcestershire sauce
1 cup cranberries
1 lb carrots, sliced

Directions:
1. Brown beef in oil, set aside.
2. Cook onion until tender, add garlic and herbs.
3. Mix broth, vinegar, sauces, cranberries, carrots, and beef.
4. Braise in oven at 275°F for 3-4 hrs.
