2 cups chocolate cookie crumbs
1/2 cup unsalted butter, melted
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
1 cup heavy cream
4 large eggs
2 tablespoons instant coffee granules
2 teaspoons vanilla extract
1/4 cup all-purpose flour
1 cup sour cream
Cocoa powder, for dusting
Coffee beans, for garnish

Preheat oven to 325Β°F (163Β°C). Grease a 9-inch springform pan.
In a medium bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom of the prepared pan.
In a large mixing bowl, beat the cream cheese and sugar until smooth. Add heavy cream, mixing until well combined.
Add eggs one at a time, beating well after each addition. Mix in instant coffee granules and vanilla extract until fully incorporated.
Add flour and mix until smooth. Pour the batter over the crust in the prepared pan.
Bake in the preheated oven for 1 hour, or until the center is set. Turn off the oven and leave the cheesecake inside for 1 hour with the door slightly open.
Remove cheesecake from the oven and let cool to room temperature. Refrigerate for at least 4 hours, or overnight.
Before serving, spread sour cream over the top of the cheesecake. Dust with cocoa powder and garnish with coffee beans.
