1 ½ lbs chicken tenderloins
½ cup all-purpose flour
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
¼-½ tsp cayenne pepper (optional)
3 large eggs
2 tbsp water
1 cup sweetened shredded coconut
1 cup panko bread crumbs
Vegetable oil (for frying)
Directions:
1. Set up a breading station: seasoned flour, egg wash, and coconut-panko mix.
2. Dredge chicken in flour, egg, and then coconut-panko mix.
3. Fry in hot oil for 2-3 minutes per side. Drain on paper towels.
