1 1/2 lbs chicken breast, diced
1 tsp kosher salt
1 tsp smoked paprika
1 tsp dried oregano
1/2 onion, minced
3 cloves garlic, minced
1 tsp fresh ginger, grated (or more if desired)
1/4 cup chicken broth
1 1/4 cups light coconut milk
1 tbsp tomato paste
1/2 tsp kosher salt
3 cups cooked jasmine rice
Fresh cilantro, for garnish
Directions:
1. Season chicken with salt, paprika, and oregano.
2. Preheat skillet over high heat, spray with oil, and brown chicken for 3-5 mins. Remove chicken.
3. Lower heat, add oil, sauté onion, garlic, and ginger for 1 min. Add broth, simmer 1 min.
4. Stir in tomato paste, coconut milk, salt. Simmer to thicken, add chicken back, cook for 3-4 mins.
5. Serve over rice, garnish with cilantro.
