1 1/2 lbs diced chicken breast
1 tsp kosher salt
1 tsp smoked paprika
1 tsp dried oregano
1/2 onion, minced
3 cloves garlic, minced
1 tsp fresh ginger, grated
1/4 cup chicken broth
1 1/4 cup light coconut milk
1 tbsp tomato paste
Fresh cilantro, for garnish
3 cups cooked jasmine rice

Directions:
1. Season chicken with salt, paprika, and oregano. Sauté in skillet until browned.
2. Remove chicken; sauté onion, garlic, and ginger. Add broth to deglaze, then coconut milk and tomato paste.
3. Simmer sauce, add chicken, and cook until heated through.
