1 1/2 lbs diced chicken breast
1 tsp kosher salt
1 tsp smoked paprika
1 tsp dried oregano or dried herbs
1/2 onion, minced
3 cloves garlic, minced
1 tsp fresh grated ginger
1/4 cup chicken broth
1 1/4 cups light coconut milk
1 tbsp tomato paste
3 cups cooked jasmine rice or basmati
Fresh cilantro for garnish
Directions:
1. Season chicken with salt, paprika, and dried herbs.
2. In a large skillet, brown the chicken over high heat. Remove from skillet.
3. Reduce heat, add oil, and sauté onion, garlic, and ginger for 1 min. Add broth to deglaze.
4. Add tomato paste, coconut milk, and salt. Simmer for a few mins.
5. Add chicken back to skillet. Cook for 3-4 mins.
6. Serve over rice, garnish with cilantro.
