Cinnamon Roasted Sweet Potatoes and Apples

2 Tbsp olive oil (divided)
½ tsp salt (divided)
4 cups sweet potato (peeled and cut into 1” cubes)
2 cups apples (cut into 1” cubes)
2 Tbsp maple syrup
2 tsp ground cinnamon

Directions:
1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
2. Toss sweet potatoes with 1 Tbsp olive oil and salt. Spread on baking sheet and roast for 20 minutes.
3. Mix sweet potatoes with apples, maple syrup, cinnamon, and remaining olive oil. Spread back on baking sheet and roast for another 20 minutes, flipping halfway.
